Pi Day 2021

I may not be consistent about blogging here, but we are consistent about celebrating Pi Day. We went all out this weekend with pies.

We started with Shepherd's Pie recipe my sister shared with me, minus the turnips.

Trey informed me that next time I need more mashed potatoes for the top. There are claims on the leftovers, so I'd say it was a hit.

We made a new pie crust recipe that my mom shared with me. It was great because I could use my mixer. It made 4 pie crusts. We used two for a sweet pie and two for a savory pie.

Pie Crust Recipe

Sift:
4 cups flour
1/2 tsp. baking powder
2 tsp. salt

Add:
1 cup butter
3/4 cup Crisco (next time might substitute butter)
Mix in Kitchen Aid until dough is crumbly.

Combine and add the following:
1 egg beaten
2/3 cup cold water
1 T. cider vinegar

Divide dough into 4 portions. Wrap in plastic wrap and chill for 15 minutes. Can freeze for future use. Roll out flat with flour. Bake crust for 10-12 minutes at 450 degrees or according to pie directions.

For Pi Day, we used all four, refrigerating two overnight with good results.

We made a Raspberry Pi. It set well and was delicious!

We also made a Chicken Pot Pie. We used a recipe from Momfessionals as a base. Here is how we did it:

Chicken Pot Pie

3/4 stick of butter
1/3 cup diced onions
2 cups frozen mixed vegetables
1/2 cup flour
3/4 cups milk
1 1/2 cups chicken broth
2 cups cooked, chopped chicken
salt and pepper to taste
2 pie crusts

Directions:
Cook vegetables according to directions.
Melt butter in a large pot. Once melted add onion and cook until clear and soft.
Add milk, flour and chicken broth. Whisk on low until creamy and bubbly.
Add salt and pepper to taste.
Stir in chicken and vegetables until thoroughly coated and mixed.
Pour into a pie crust and cover with the other crust. Seal them shut by pressing the edges together. Cut a few slits on the top.
Bake at 350 for 30-35 minutes until the crust is golden brown.
Let sit for 10-15 minutes.

It is a hearty, filling dish, so with this and the Shepherd's Pie we will be having pie leftovers tonight, and I guess fight over the last piece of raspberry pie. We did have a little bit of pie crust dough left over so we made scrap cookies/cinnamon sugar pie. That was eaten up almost immediately.
