Apple Muffins

After a trip to an apple orchard and the Arboretum this weekend, a tasty fall treat was on my mind.

This recipe was adapted from the Arboretum newsletter.

Ingredients:
  • 1/2 cup sugar
  • 1/4 cup butter
  • 1 egg
  • 1 cup milk
  • 1 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 1/2 cup apples, peeled, cored and diced
Topping:
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
Preheat oven to 400 degrees.  Cream together butter and sugar.  Add egg and beat well.  Stir in the milk.  Combine the remaining dry ingredients in another bowl.  Add the wet mixture to it and blend until moistened.  Add the apple and blend.  I had the kids help me add ingredients and stir along the way. 

I used 18 muffin cups, filling them 2/3s full.  This was a stretch, but the size was better for the kids. 

Mix the topping ingredients.  The kids helped me sprinkle it on the top of the muffins.

Bake in the oven for 20-25 minutes.

Because the weather here has been fantastic, the kids sat out on the deck to eat their muffins.  By the time I got the camera the muffins were gone!  Luckily the kids weren't.
